While fruit-forward natural-processed offerings from the region often get the bulk of attention, Yirgacheffe's washed coffees are regarded as some of the cleanest and most refined in the world.
Aromas of citrus and stone fruit rise from the cup, leading to sweet notes of baked apple, bittersweet cacao nib, and vanilla. A silky body adds to the experience, leaving a delicious lingering finish of milk chocolate on the palate.
Processsing
The washed process used for Yirgacheffe Resetti begins with careful cherry selection, ensuring only the ripest fruit is processed.
After pulping to remove the outer skin, the coffee undergoes fermentation in water to break down the remaining mucilage, a step that enhances clarity and highlights the coffee’s natural flavors.
The beans are then thoroughly washed and dried on raised beds, where they are turned regularly to ensure even drying.
This meticulous process results in a clean, vibrant cup that showcases the bright citrus notes and smooth milk chocolate undertones characteristic of Yirgacheffe coffees.
This coffee is produced by smallholder farmers from the Yirgacheffe district of the Gedeo Zone in Ethiopia - widely considered to be the birthplace of coffee. The cherries are carefully handpicked and processed with care at the Resetti Washing Station.
Owned by a family of coffee producers, the washing station operates in collaboration with Ethio-Catalyst, a group dedicated to improving coffee quality and supporting sustainable farming practices in Ethiopia.
