About the Coffee

Canyon exemplifies our approach to blending: using coffees with distinct flavor profiles to create a cup that’s balanced and greater than the sum of its parts. We bring together organically grown, high-elevation coffees from three continents, each chosen for the unique character it contributes. Mexican and Colombian coffees provide a smooth, chocolatey foundation with notes of raisin, toasted nuts, brown sugar, and citrus. A natural-processed lot from Ethiopia adds a bright lift with berry sweetness, cocoa powder, and a lively citrus acidity that rounds out the cup. The result is a flavor profile that’s comforting yet vibrant, structured yet easygoing. Originally developed as our flagship espresso, Canyon is just as enjoyable brewed however you like - pour over, batch brew, cold brew, or French press. It’s easy to dial in, endlessly versatile, and still the blend we reach for most often.
