This unique Costa Rican microlot offers a delightful sensory experience, beginning with vibrant bursts of mixed berries and ripe strawberries. As the cup evolves, layers of cherry and nectarine emerge, balanced by bright hints of lemon acidity that add a refreshing zest. The coffee’s juicy body creates a lively mouthfeel, and the journey concludes with a smooth, peach tea-like aftertaste that lingers pleasantly on the palate.
The Sánchez Gonzáles family has owned Finca La Canoa since the 1950s. Initially planted with Typica, the farm later transitioned to Catuai and Caturra varieties. In 2018, the family rejuvenated the farm by planting experimental hybrids, including the San Isidro variety, valued for its cup quality, high yield, and resistance to coffee leaf rust. This dedication to innovation has positioned La Canoa as a model of quality-focused coffee farming in the Central Valley.
This natural process begins with cherries delivered to Coope Libertad, where they are stored overnight in tanks. The cherries are then spread on raised African beds for 15-25 days until they reach 10% humidity. After resting as parchment coffee for 4-8 weeks, the beans undergo hulling, followed by a rigorous sorting process—first by size, then by gravity, and finally with electronic sorting. This careful attention to detail results in a clean, flavorful, and vibrant cup.
On second thoughts, my 1 star review was overly harsh, but I can’t see a way to modify my rating. I’m new to single source coffee and relatively new to my espresso machine. I also don’t know what my taste really is (floral, chocolate, nutty, dark, light roast?). Anyway, FreeForm reached out to me after my review, and have been diligent in trying to help me understand “my taste”. I can’t speak highly enough for their customer support in wanting to please the customer. I hope I can find a few perfect brews for my taste and remain a loyal and local customer.
