Flavor Profile

Koke Honey offers a bright and sweet flavor profile with distinct notes of grapefruit, peach, and pineapple, balanced by floral undertones of jasmine and a hint of orange zest. The honey processing brings out a syrupy sweetness and juicy body, making this coffee both complex and refreshing. Each sip showcases the vibrant, fruity character typical of Yirgacheffe coffees, with a lingering sweetness that invites you back for more.

Koke Washing Station

This coffee is produced by smallholder farmers from the Yirgacheffe district of the Gedeo Zone in Ethiopia - widely considered to be the birthplace of coffee. The cherries are carefully handpicked and processed at the renowned Koke and Birbes Kela washing stations. Built in 2011, the Koke Washing Station has a long-standing reputation for producing exceptional coffees, and with the recent addition of the Birbes Kela station, even more local farmers have access to modern processing facilities and the opportunity to showcase their high-quality harvests. The result is a coffee that truly represents the world-class terroir of Yirgacheffe and the dedication and skill of its farming communities.

Honey Process

The honey process used for Koke Honey involves removing the outer skin of the cherry while leaving varying amounts of sticky fruit mucilage on the beans, which influences the final cup profile. After resting for two days in the cherry, the beans are depulped and dried on raised beds, allowing for optimal airflow and moisture control. This meticulous process enhances the coffee’s sweetness and body, creating a unique flavor experience with reduced water usage compared to traditional washed processing.
