Meet the Producer

Elkin Guzman is a trailblazer in the world of coffee processing, and his farm, El Mirador, located in El Portal, Huila, is a testament to his dedication to innovation. With over 70 years of family experience in coffee cultivation, Elkin has spent the last twelve years perfecting post-harvest techniques such as Coffee Maceration, Natural Hydro Honey, and, most notably, his signature Strawberry Co-fermented Natural process. This method infuses the coffee cherries with a strawberry and molasses-fed culture for 330 hours, resulting in a flavor profile that is both balanced and adventurous, showcasing Elkin’s mastery of experimental fermentation.

Processing Magic

The Strawberry Co-fermented Natural process begins with carefully selected Catiope cherries, each measuring over 20 degrees Brix, indicating optimal ripeness and sugar content. The cherries undergo a preliminary fermentation for 60 hours before being combined with a “mother culture” infused with fresh strawberries and molasses. This co-fermentation is meticulously controlled and monitored for 270 hours, allowing the coffee to develop its signature sweet and fruity flavors. Once fermentation is complete, the cherries are dried on raised beds to maintain the vibrant characteristics of this unique process. The result is a truly special coffee that highlights the full potential of the Catiope variety and the art of co-fermentation.
