About the Coffee

Chambaku is a masterpiece of processing by young, up-and-coming producer, Juan Felipe Restrepo. Grown on his family farm in Chinchilla, Caldas department, this blend of Caturra and Colombia varieties has all of the punchy, tropical fruit we look for in an anaerobic natural.

Restrepo is known for his meticulous post-harvest processing, and in the case of Chambaku, he subjects the coffee to an extensive 48-hour water immersion, followed by anaerobic fermentation and sun-drying. The result is a vibrant, fruity coffee with exceptional complexity and cleanliness.

We sourced this coffee through Restrepo's exporting partner, Forest Coffee, who internally refer to this lot as "Bubble Gum," a reference to its intense candy-like sweetness. In the cup, we taste bright notes of raspberry, passionfruit, and watermelon, balanced by hints of dark chocolate and honeycomb.

Meet the Producer

We were first introduced to Felipe Restrepo in late 2024 from our trading partner, Blair Smith at Ally Coffee. She knew of a young Colombian coffee producer looking to build relationships with specialty coffee roasters in the U.S. and offered to connect us.

Felipe has a personality as vibrant as his coffees - we were blown away by the passion and excitement this young man has for crafting innovative coffee. He shared his family's forty year history of milling and growing coffee and his path to embracing the family business through exposure to the global specialty coffee scene on a trip to South Korea.

We knew it would only be a mater of time before Felipe's coffees graced our menu, and when we tasted this anaerobic natural microlot, we had to have it. We look forward to supporting Felipe's ongoing efforts and we're excited to see where his career will take him!
