Built on a foundation of Brazil and Colombia, Plateau delivers a rich sweetness of dark chocolate, toffee, cinnamon, and caramelized sugar, with a silky, syrupy body and gentle, rounded acidity. A touch of Ethiopia adds red-fruit aromatics and a subtle lift to the finish, creating depth without losing approachability.

1. Grind and Prep

Grind fresh for espresso, distribute evenly in portafilter, tamp level with firm, consistent pressure.

2. Pull Shot

Aim for your target yield and adjust grind to hit time and flavor goals.

Dial In Your Flavor

Looking for more body & chocolate?
Shorten the brew ratio to 1:2.0 (≈36 g out) for a richer, silkier shot.

Prefer more sweetness & clarity?
Lengthen the brew ratio to 1:2.2–1:2.3 to open up brighter top notes.

Tasting too bitter or roasty?
Grind coarser or lower the temp a few degrees.

Tasting too sour or thin?
Grind finer or raise the temperature a few degrees.

Rest Time

Due to the concentrated pressure involved in espresso extraction, it’s especially important to let coffees “rest” before brewing. This allows carbon dioxide produced during roasting to escape, leading to more consistent and balanced shots.

If possible, we recommend waiting about two weeks from the roast date before brewing Plateau as espresso. If you notice a thick, bubbly head of crema when pulling your shots, your coffee may still be releasing gas — give it a little more time to rest.
