About the Coffee

Espresso is a concentrated expression of coffee’s power and complexity. For those who prefer something smoother and more grounded than today’s brighter styles, Plateau offers balance and familiarity without compromise.

Built on a foundation of Brazil and Colombia, Plateau delivers a rich sweetness of dark chocolate, toffee, cinnamon, and caramelized sugar, with a silky, syrupy body and gentle, rounded acidity. A touch of Ethiopia adds red-fruit aromatics and a subtle lift to the finish, creating depth without losing approachability.

The name honors the Colorado Plateau, the vast region that surrounds us to the north and an enduring landscape that inspires reflection, balance, and connection to place. Like its namesake, Plateau invites you to slow down and take in the view.

Roasted with intention, it celebrates the timeless comfort of classic espresso while showcasing the sweetness and clarity of 100% specialty-grade Arabica. Smooth and indulgent on its own, yet strong enough to shine through milk, Plateau is a steady favorite for any espresso drinker.

2. Pull Shot

Aim for your target yield and adjust grind to hit time and flavor goals.

Dial In Your Flavor

Looking for more body & chocolate?
Shorten the brew ratio to 1:2.0 (≈36 g out) for a richer, silkier shot.

Prefer more sweetness & clarity?
Lengthen the brew ratio to 1:2.2–1:2.3 to open up brighter top notes.

Tasting too bitter or roasty?
Grind coarser or lower the temp a few degrees.

Tasting too sour or thin?
Grind finer or raise the temperature a few degrees.

Rest Time

Due to the concentrated pressure involved in espresso extraction, it’s especially important to let coffees “rest” before brewing. This allows carbon dioxide produced during roasting to escape, leading to more consistent and balanced shots.

If possible, we recommend waiting about two weeks from the roast date before brewing Plateau as espresso. If you notice a thick, bubbly head of crema when pulling your shots, your coffee may still be releasing gas — give it a little more time to rest.

Excellent coffee

Really, everything we have ordered from Freeform has been excellent. We’ve tried several and have not been disappointed. We tend to stay with organically grown, clean coffee and are confident that all of Freeform’s growers strive to produce coffee that is as chemical and toxin free as possible. I know that the folks at Freeform attempt to deal with responsible farms. Ask them and they will give you their philosophy on producing a healthy cup of coffee.

Online coffee

Coffee review: plateau coffee, since it’s a darker roast I decided to go with 180 degree Fahrenheit for water. I had to grind quite coarse, I tried a 1/3 ratio a 1/2 ratio and a 1/1 ratio. 18 grams in 18 grams out was the best tasting. The aroma went from sweet down to bitter but not sour. I can consistently had this as a milk based drink, and hardly ever had to add flavoring to mask bitterness. The notes were chocolate and nutty, and it was very delightful. I do recommend this espresso blend for dark roasted coffee lovers.
