About the Coffee

Nectar comes to us from the incredible origin of Huila, Colombia, where Rodrigo Sánchez continues to push the boundaries of flavor with his celebrated co-fermentation techniques. This microlot features Caturra and Bourbon varieties grown at 1,730 meters on his family’s farm, Finca Monteblanco.

Rodrigo’s “Nectar Citrullus Washed” process involves a 190-hour fermentation using a carefully cultivated mother culture enriched with tropical fruit nectar—specifically from the Citrullus family (melon, watermelon). The culture includes strains of lactobacillus and saccharomyces cerevisiae, designed to amplify the coffee’s natural sweetness and complexity without overwhelming its terroir.

The result is an irresistibly juicy and expressive cup, saturated with flavors of honeydew, cantaloupe, and watermelon juice, balanced by a citric brightness and a medium body. This is the clearest expressions of melon we’ve ever tasted in coffee, a reminder of how innovative processing can add an unexpected dimension to familiar varieties.
