About the Coffee

Manzanita opens with bright tropical fruit and delicate florals, led by notes of papaya, honeysuckle, and citrus peel. The cup feels vibrant and aromatic, with juicy sweetness balanced by a refreshing brightness. As it cools, subtle citrus oils and floral tones linger on the finish, creating a cup that is expressive and refined.

This limited release is produced by Jorge Rojas and Erika Yaguara at their farm, La Roca Estate. The lot we selected comes from a section of the farm known as La Experimental, a name that reflects Jorge’s curiosity and ongoing pursuit of better coffee. Grown in the mountainous region of Tolima, where diverse elevations and microclimates create ideal conditions for specialty coffee, this lot features the Sidra variety, a rare hybrid known for its elegant aromatics and layered fruit character. 

After careful hand harvesting, the coffee is washed processed, beginning with depulping followed by fermentation in water tanks for 24 to 72 hours before being thoroughly washed and slowly dried. This method highlights clarity and structure in the cup while allowing the expressive qualities of Sidra to shine through.

Jorge Rojas

Few people have influenced Ethiopian coffee more than Tesfaye Bekele, founder of Suke Quto Farm in Guji. After wildfires devastated the region in the late 1990s, Tesfaye, then working in environmental protection, saw an opportunity to restore the forest through coffee cultivation. What began as a reforestation project grew into one of Ethiopia’s most respected farms.

Today, Suke Quto covers more than 200 hectares and works with about 170 local outgrowers who deliver cherries to the on-site washing station. The farm’s volcanic soil, high elevation, and sustainable agroforestry practices produce coffees known for their clarity and sweetness. Certified Organic and Rainforest Alliance, Suke Quto continues Tesfaye’s effort to protect Guji’s forests while providing stable, long-term livelihoods for the community.
