About the Coffee

This special anaerobic lot from Suke Quto showcases everything we love about Tesfaye Bekele's coffees, while pushing into new territory with bright, fruit-forward complexity. The limited-oxygen fermentation amplifies notes of blueberry and pomegranate, creating a vibrant cup lifted by delicate floral aromatics. A dark chocolate backbone grounds the profile, giving structure and balance to the effervescent fruit character. We roast it light to preserve clarity and allow these sparkling flavors to shine.

About the Processing

For this release, ripe cherries undergo a limited-oxygen fermentation that intensifies their natural sweetness and fruit character. After fermentation, the coffee is dried on raised beds under the Ethiopian sun, allowing the final cup to take on both clarity and depth. The result is a lively, expressive coffee that highlights the potential of meticulous processing paired with one of Ethiopia’s most celebrated growing regions.

Meet the Producer

Tesfaye Bekele

Few people have influenced Ethiopian coffee more than Tesfaye Bekele, founder of Suke Quto Farm in Guji. After wildfires devastated the region in the late 1990s, Tesfaye, then working in environmental protection, saw an opportunity to restore the forest through coffee cultivation. What began as a reforestation project grew into one of Ethiopia’s most respected farms.

Today, Suke Quto covers more than 200 hectares and works with about 170 local outgrowers who deliver cherries to the on-site washing station. The farm’s volcanic soil, high elevation, and sustainable agroforestry practices produce coffees known for their clarity and sweetness. Certified Organic and Rainforest Alliance, Suke Quto continues Tesfaye’s effort to protect Guji’s forests while providing stable, long-term livelihoods for the community.

Hario Switch

A hybrid immersion and pour over recipe for balanced sweetness, rounded acidity, and bright fruit character.

Ratio
1:16 (22g coffee : 352g water)

Grind
Slighly coarser than regular V60 (medium-fine+)

Brew

  • With switch in closed position, pour 152g of 200°F water and bloom for 45 seconds.
  • At 00:45, open switch to begin drawn down.
  • At 01:30, add 100g water in swirl pattern.
  • At 02:15, add 100g water in swirl pattern.
  • Allow to finish dripping out, aiming for a ~04:00 total brew time.

Brew

  • Add 17g coffee to the Aeropress and our 60g of 200°F water to bloom
  • Let steep until 00:45
  • At 00:45, pour to 200 g total and insert the plunger to seal.
  • At 01:45, press gently over 30 to 45 seconds.
  • Add a 50g hot water to brewed cup, adjusting to taste.
