About the Coffee

Koke Honey marks the arrival of Ethiopia’s new harvest to our roastery. Sourced from over 1,200 smallholder farmers in the Gedeo Zone, it is processed using the honey method, which leaves part of the fruit intact during drying to develop layered sweetness and a rounded body.

In the cup, Koke opens with ripe peach and mango, moves into a smooth, vanilla-laden body, and finishes with tangerine sparkle and delicate florals that linger. The honey process, along with careful drying on raised beds, enhances both sweetness and clarity while using less water than washed methods.

Meet the Producer

Koke Honey is produced at the Koke and Birbes Kela washing stations, which serve farmers from surrounding kebeles (townships) in Yirgacheffe. The Koke station, established in 2011, has refined its approach over more than two decades, while Birbes Kela, opened in 2020 by Semira Negash, has quickly earned recognition, including placement in Ethiopia’s Cup of Excellence.

Koke's farmers cultivate heirloom varietals such as Kurume, Dega, and Wolisho at elevations near 1,800 meters. Selective handpicking and precise processing capture the region’s signature brightness and florals, creating a cup that reflects both Yirgacheffe’s celebrated terroir and the dedication of its farming community.
