About the Coffee

El Vergel Anaerobic Natural is an expressive coffee defined by vibrant fruit character and lively acidity. Notes of pineapple guava, orange, and lemon bring brightness and energy to the cup, while a rounded vanilla bean sweetness provides balance through the mid-palate. As the cup cools, layers of dark chocolate emerge, adding depth and structure to the finish.

The result is a dynamic and distinctive coffee that showcases the remarkable influence fermentation can have on flavor. While unmistakably fruit-forward, the cup remains clean and structured, allowing each layer of flavor to reveal itself with clarity.

Produced from Red and Yellow Caturra varieties, this lot undergoes an anaerobic natural fermentation, where whole coffee cherries ferment in an oxygen-limited environment before drying. El Vergel takes the process further through carefully managed fermentation and drying protocols designed to build complexity while preserving structure in the cup.

Known internally as “Guava Banana,” this coffee has become one of El Vergel’s signature offerings. The resulting profile highlights the estate’s thoughtful approach to fermentation, delivering vibrant fruit character, layered sweetness, and a cup that remains both expressive and intentional.
