About the Coffee

This lot comes from Juanachute’s San Francisco plot in the hills of Tarrazú, where the dry season lines up with harvest and the sun does quiet, steady work. Caturra and Catuai cherries are picked at peak ripeness, then honey processed so the sticky fruit layer stays in contact during drying. The coffee rests on raised beds in full sun for 14 to 21 days, which concentrates sweetness and keeps the profile bright and clear. In the cup it moves from praline to caramel, lifts into golden raisin, and finishes clean. Simple, sweet, and beautifully structured.

Meet the Producer

Juanachute was among Costa Rica’s early micromills, founded by Luis Anastasio “Don Tacho” Castro. The operation spans several small plots across Los Santos with a mill near San Pablo, and the family oversees everything from planting to sealing the jute bags. That control shows up in the cup.

The Castros also run a small roastery and coffee shop in San Pablo. Don Tacho’s son, also named Luis Anastasio, launched a barista education program at the local high school with around 30 graduates each year and competes in the Costa Rica barista championship serving Juanachute coffee. It is a tight loop of farm, mill, and community that we are proud to support.

Bright and Smooth

After not drinking a Costa Rica coffee for quite some time, this coffee has a mellow aroma and flavors that burst very nicely on the tongue. There is no bite and it leaves a very creamy finish in the mouth.
