About the Coffee

This is a single lot from a single farm, planted to a single variety. El Llano is Spanish for "the plain," an ironic name for the steep, mountainous terroir Tarrazú is famous for. Caturra is a compact mutation of Bourbon, the workhorse of Costa Rican coffee for generations, known for clarity and a clean structure in the cup. 

Keeping one farm's Caturra separate through harvest, drying, and export takes deliberate effort at a mill that could more easily blend it into a larger regional offering. What you get for that effort is a cup with a distinct flavor profile that tells a story of its producer and terroir.

Coffee cherries for this lot were picked at peak ripeness, sorted for defects and debris, then spread across drying beds with pulp and mucilage still attached. They dry that way for about fifteen days, slowly, while the fruit sugars around the seed work their way inward. 

In the brewed cup, juicy notes of tangerine lead lead the way, followed by a sweet vanilla cake-like flavor in the mid-palate, and cacao nib settles underneath with a dry, lightly toasted edge that keeps all that sugar honest. The body is silky, the sweetness is generous, and the finish clears quickly, making the next sip easy to take.

Café Nace Micromill

Tarrazú lies in the high mountains south of San José, on the Pacific side of Costa Rica's central spine. Locals call it the Zona de Los Santos for the string of towns carrying San or Santa in their names. Volcanic soil, steep ground, and roughly 2,400 millimeters of rain a year across a seven-month wet season make for some of the best terroir in Central America, and some of the most intensively planted ground. Between the coffee rows, smallholders grow bananas, avocado, and citrus on land that has passed between generations, and many farms still hold stands of primary forest and shade trees over the springs that surface on the hillsides.

The Navarro Ceciliano family has been farming coffee in Los Santos for more than a hundred years. What began as traditional coffee farming has been handed down, added to, and gradually reshaped by each generation into a quality project. The family manages farms spread between 1,350 and 1,900 meters across the region, which gives them several distinct microclimates to work with and the freedom to treat each parcel on its own terms rather than pooling everything into one profile.

In 2016 they formalized that work as Inversiones Coffee Nace S.A. and built their own micromill. The name folds together the two family surnames, Navarro and Ceciliano, and doubles as the Spanish word nace, meaning "is born." Owning the mill is what makes a lot like this one possible. It lets the family decide when cherry gets picked, how it gets sorted, how long it sits on the beds, and which farms stay separate all the way through, rather than handing that judgment to someone else's processing schedule.

  • Let steep until 00:30
  • At 00:30, pour 100g of water to a total weight of 150g in a gentle swirling movement.

  • At 02:00, pour 102g of water to a total weight of 352g in a gentle swirling movement.

Brew

  • Add 50g coffee to the press and pour 550g of 200°F water, saturating all the grounds
  • Rest the lid loosely on top (don't plunge) and let steep until 04:00
  • At 04:00, stir the crust gently and skim the floating foam and grounds off the surface
  • Let settle until 06:00, then press the plunger just below the surface, no further
  • Pour slowly, leaving the last sip in the press to keep sediment out of the cup
