An exceptional example of high elevation-grown Central American coffee. This single origin lot is produced by lifelong coffee farmer, Itiel Vásquez, on his 34 hectare farm near Huehuetenango, Guatemala.
Señor Vásquez uses no herbicides in his farm, La Inteligencia, and takes pride in picking only mature coffee cherries.
The resulting cup is notably clean and smooth, with delicate hints of stone fruit (think peach), almond, and green apple. La Inteligencia finishes light and bright with a nippy acidity that wakes up slumbering taste buds.
We’ve roasted this coffee light to showcase the quality of its terroir and maintain acidity, but with enough heat and time to avoid grassy and vegetal notes often associated with light roasts.
