About Costa Rica - Hermanos Fallas Natural
For the second year, we are honored and pleased to present the beautiful coffee from Finca La Tejana, produced by brothers Freddy & Henry Fallas. This special direct trade relationship is made possible by our export partners in Costa Rica, Selva Coffee, who help producers and roasters connect to build meaningful, lasting relationships.

Located in San Francisco de Leon Cortes, a subregion of the distinguished coffee producing region of Tarrazu, Freddy and Henry Fallas manage several multi-generational coffee farms. Finca La Tejana, a 1.5 hectare plot (about 3.7 acres), is one of the jewels of their recent efforts to produce and export specialty coffee under their own brand, Cafe de la Tia ("Auntie's coffee"). La Tejana is planted entirely with the Arabica variety known as Caturra, a natural mutation of the Bourbon variety and one of the most economically important varieties grown in Central America.
This particular lot is a natural / sun dried process of their Caturra harvest (read more about coffee processing here). At just six bags, or around 900 pounds, this microlot is the prized harvest of Cafe de la Tia. We're thrilled to have had the opportunity to purchase the entire lot; as a small micro roaster, it's pretty special to be able to say that we are the only coffee roaster in the world to offer this coffee.
Only coffee cherries at the peak of ripeness have been harvested for this lot, which are sealed in bags for a day to induce fermentation. The cherries are then spread out on raised beds and dried in the sun for several days with frequent turning to ensure even drying. This extended contact time with the surrounding fruit imparts a sweet fruitiness to the coffee seed and lends a smooth, creamy texture to the brewed cup. We've been really impressed by the quality of Freddy & Henry's coffees and their processing practices - especially considering the short number of years they've been processing their own coffees - and this latest release is proof that they are only improving in their craft.
Hermanos Fallas Natural, as we're calling this lot, is bursting with gorgeous berry-like aromas and a sweet-tart raspberry note in the cup, enveloped in tropical fruit flavors, a hint of vanilla bean, a clean, creamy body, and an ultra-smooth finish.
Costa Rica produces some of the finest coffees in the world and we think this new natural process release from the Fallas brothers is right up there with the best of them. We hope you enjoy!
