About Colombia - Vergel Estate Anaerobic Natural

Wow, where do we start with this one?  I'll start off by saying that this coffee should come with a disclaimer - it's not for the coffee lover simply looking for a delicious cup of coffee in the morning.  If you're looking for a dependable daily drinker, we've got plenty of other great options.  However, for the fearless and intrepid coffee adventurer in search for new experiences and flavor profiles, we think you're really going to have fun with this one.

The Cup

Like a summer blockbuster movie, Colombia Vergel Estate holds nothing back.  An absolute explosion of flavor hits you from the moment you notice the intense tropical notes of banana and guava, to the jasmine-like floral aroma as you exhale, and the long lingering flavor of dark chocolate as you try to make sense of what you just tasted.  Like us, you may initially find it confounding, as if Shady & Elias Bayter of El Vergel Estate somehow managed to pack more flavor into the normally available space.  As you continue to sip however, you'll find that your tastebuds adapt and are able to parse through the intensity to identify more nuanced and individuated tasting notes.  We loved the creamy character of the cup, which paired with the tropical fruit notes, provided an ultra-delicious caramelized banana flavor, which is cut by a tangy, bright sweetness of tropical tree fruit such as guava.  While bright and creamy, we also find the body to be on the fuller side, providing space for a base layer of dark chocolate supporting the fruity high notes.  Our new team member, Rafe, may have summed it up best when he said it tastes like "Juicy Fruit" gum.

The Producer

El Vergel is the estate coffee farm of Forest Coffee, a direct trade green coffee producer based in Bogotá, Colombia.  Farm owners Shady & Elias Bayter have invested heavily in exploring up and coming varietals, experimental processing techniques and competition-level quality.  This particular lot is sourced from their estate farm, El Vergel, in Tolima and is comprised entirely of the Caturra varietal.  Processed using the Anaerobic Natural process, the ripe coffee cherries are fermented in a temperature-controlled anaerobic (oxygen-deprived) environment for 48-60 hours, followed by intermittent sun drying in a series of stalls in different moisture levels to enhance the complexity of flavor.  Lastly, the processed seed are dried in silos to accurately meet final moisture content goals and rested for 45 days to stabilized and homogenize the lot. 

The Roast

For a coffee with this much flavor potential, its our job to get out of the way and let the coffee do all of the talking.  As such, we're roasting Vergel Estate to a light roast with a brief development time so as not to risk obscuring any of these amazing and delicate flavors with a heavy-handed roast.

WOW… An explosion awaits your taste buds! This is a WILD coffee that requires some taming. A bucking bronco! As a V60 pour over it was just too erratic for my taste to handle, but through an AeroPress—ground fine—it lost some of it’s extreme nature of CRAZY fruit and tamed down to balance out/tone down the super-bright notes for a truly exotic, eye-opening, wonderful cup.

Juice explosion!

This is one of the juicer coffees I’ve ever had in my life. Delicate and smooth in a v60 with an ever increasing panoply of floral and fruity notes as the cup cools, if it lasts that long.
